Apple bread pudding

  • 300g white bread or brioche, cubed
  • 1 Bramley apple, peeled, cored and chopped
  • 30g walnuts, chopped
  • ¾ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 500ml whole milk
  • 90g maple syrup, plus extra for drizzling

 

  1. Preheat the oven to 180˚C/160˚C fan/gas mark 4 and lightly grease the bottom of six individual ramekin dishes, or one large dish.
  2. Combine the bread cubes, apple pieces, walnuts, cinnamon, nutmeg and salt until well mixed. Using a wooden spoon, stir in the almond milk and syrup and allow the mixture to stand for 10 minutes.
  3. Divide the mixture between the dishes and bake for 15-20 minutes until golden brown. Drizzle with syrup and serve warm.
